THE REAL HOME OF PAELLA
Contrary to tourist traps in Barcelona or Madrid, paella was actually born in Valencia. The traditional version is with rabbit, chicken, and green beans. In fact it does not even include seafood!

While Spanish (Castellano) is spoken widely the locals also speak Valenciano which is a regional dialect of Catalan. Road signs, menus, and even schools often use both!

Every March, Valencia hosts Las Fallas, a wild week-long festival where huge sculptures (some several stories high) are built and then set on fire. It's an experience like no other!
